Hi, I’m Elisabeth and this is my blog about being vegan and living MORE! In December 2010, I decided to go vegan and it has brought so much to my life. It has helped me to find a diet that allows me to live freely and has prompted me to get adventurous in the kitchen. (You can read more about that here.) While I have to admit that I can sometimes be rather opinionated about my aversion to meat and cheese, this website isn’t meant to exclude anyone. My goal is to fill this blog with recipes, party ideas, and advice that will bring more to everyone’s lives, vegan or not.
Though you will find many recipes that are gluten-free and even a bunch that are super healthy, this isn’t your soy-free, gluten-free, all-natural all the time website. I post the recipes I love to eat and share, so a lot of them focus on ease of preparation because I’m not always interested in spending hours making a meal. Some of them will even be classified as vegan “junk” food. It is reflective of the range of vegan cooking that fits my lifestyle, healthy during the week and fun on the weekends.
A little about me:
I grew up in Buffalo, NY and lived there until I graduated from college. Not a fan of cold weather, I packed my bags shortly after graduation and headed to Charlotte, NC. In Charlotte, I began my teaching career and fell totally head over heels in love with my husband, Jeremy, the wonderful man who makes this blog possible by following me around the kitchen cleaning up my messes!
After two years in Charlotte, it was time for a change of scenery and we moved to Austin along with our faithful pup, Osi-Rose. We spent four glorious years there, soaking up the sun, partying on 6th street, and enjoying all of the vegan fare. But being so far away from family was tough and in May 2013, we returned to Charlotte to be with my husband’s family and closer to mine.
Today, I am loving life in Uptown Charlotte where Jeremy, Osi-Rose, and I live. I am a fifth grade teacher and in my spare time, you’ll most likely find me running on the Greenway, at a happy-hour, or getting creative in the kitchen.
