Grilled Chickpea Salad Sandwiches

Ingredients
  • 1 16-oz. can chickpeas
  • 1 tbsp. Frank's Hot Sauce
  • 2 tbsp. vegan mayonnaise
  • 2 tbsp. nutritional yeast
  • 2 tbsp. chopped red onion
  • ⅓ cup chopped green pepper
  • bread, 8 slices
Instructions
  1. Mash the chickpeas with the hot sauce.  I use a large plastic slotted spoon, but a fork or avocado masher will also do the trick. Then, stir in the vegan mayo and nutritional yeast, and veggies.
  2. Spread the chickpea salad on your favorite vegan bread, add some earth balance, and grill it up!
  3. Serve with the creamy tomato basil soup.  The sandwich is especially good dipped in the soup...yum!
